For our opening week, we sat down with our Head Chef, Malte Half, to get to know him a little better and find out what makes him tick.
Malte Half is a master of his craft, with a passion for experimenting with different flavours and textures. When asked about his favourite type of music to listen to while working, he responded with “Electro all the way.” It seems that the high-energy beats of electro music keep Malte inspired and motivated as he whips up his culinary creations.
When it comes to snacking, Malte keeps it healthy with Vegan Kabanos, a savoury snack that’s perfect for fueling his busy day. But it’s not all work and no play – Malte loves to unwind by watching the popular TV show ‘Come Dine With Me.’ We can’t blame him, it’s always fun to see what happens when amateur chefs assemble to impress each other.
One dish that best describes the Glas Restaurant team, according to Malte, is a new dessert coming next week – the Tarragon Creme Brûlée, Parsley Meringue, Coriander Gel, and Dill Rocks. This experimental dish is a true flavour experience, just like the team at Glas Restaurant who are always pushing the boundaries of what’s possible with vegetarian and vegan cuisine.
Malte’s favourite dish on the menu is the Miso Parsnip, Carrot Risotto, Artichoke Granola, and Candy Carrot. He loves that this dish showcases Ireland’s local vegetables and packs a real flavour punch. When asked about his proudest moment while working at the restaurant, Malte humbly responded that he doesn’t have one but is extremely proud of how Glas Restaurant has evolved over time, leading the way in Ireland for vegetable-based food.
Malte’s journey into the restaurant industry is a long one, and we wish we had all the time to hear about it. But what we do know is that he has a passion for cooking local and Nordic cuisine. However, his favourite food to eat is Indian. We can’t blame him, who doesn’t love a good curry?
If Malte could eat one food for the rest of his life, it would be pizza… You’ll hear no argument from us. And if he could have any famous chef cook for him, it would be Douglas Mc Master of Silo, a zero-waste restaurant in Brighton. It’s clear that Malte is passionate about food and sustainability, just like the team at Glas Restaurant.
