Welcome back to another edition of our weekly blog series, where we introduce the staff members of Glas Restaurant. Today, we’re getting to know Diego Gutier, our chef de partie, a little better.

Diego is an avid music lover and his last played song on Spotify is “I Guess That’s Why They Call It the Blues” by Elton John. When asked about his favourite type of music to listen to while working, he said, “I love to listen to indie rock, indie pop, hard rock and rap rock. Anything that gets me in the zone.”

We then asked Diego about the one snack that we’d always find in his kitchen, and he mentioned his love for white grapes and raw fruit bars. While his favourite dish on our vegetarian food menu is the King Oyster mushroom, a delicious vegan option, on the menu, he believes that the Miso Glazed Parsnip is the dish that best describes the Glas Restaurant team.

“It’s one of the best-sellers, has multiple tastes and, the best part, is vegan”, he said. This dish is becoming a popular choice throughout our series so far across a number of different questions.

When asked about his favourite way to unwind after a long day, Diego said that comfort food, reading, and watching series are his go-to activities.

We wanted to know what drew Diego to the restaurant industry, and he shared his journey from being a vegan to attending courses and learning more about home cooking. “Once I moved to Europe as a fresh start, I decided to jump into this universe as a chef”, he said. A journey Glas is always proud to be a part of when it comes to our team.

Diego’s favourite cuisine to cook or eat is Brazilian cuisine. He also enjoys cooking Thai and Indian food. When asked about his proudest moment while working in the restaurant, he mentioned it was his first time on the pass during a quiet Saturday lunch service. He also spoke about the Christmas Eve lunch service, where they served 130 people in a 3.5-hour service.

We then asked Diego about his dream of having any famous chef cook for him. He chose Alexis Gauthier, who is a French chef and owner of the highly-rated Gauthier Soho restaurant in London.

Finally, we asked Diego the age-old question, “If you could eat one food for the rest of your life, what would it be?” And his answer was Mushroom Vegan Stroganoff. A fantastic choice.

Reservations & Deposits

Children are welcome for lunch but children under 10 years are not permitted for dinner service. Reservations can be made through the OpenTable platform or by calling us on +35316724534. A deposit of €20 per person is required to make a reservation. This will be deducted from your final bill. Notice of cancellation must be given 48 hours in advance of your reservation, in which case your deposit will be refunded. Please note that dogs are not permitted on the terrace.
