It’s great to have you back for our weekly blog series, where we shine a spotlight on the fantastic team behind Glas, of the leading vegetarian restaurants Dublin has to offer. This week, we had the pleasure of sitting down with Chef Amber to get to know her a little better. So, let’s dive in!
First up, we asked Amber what her last played song on Spotify was, and her answer was “Tebi Rex – I’m the Best.” It’s clear that Amber has great taste in music! But what type of music does she enjoy listening to while working? She likes “anything high-energy, usually punk”. It’s a fun workplace when there are some upbeat tunes to keep us motivated in the kitchen.
When it comes to snacking, Amber has a particular favourite: a little bit of snacking cheese on the side while she cooks. We always find it interesting to hear what our chefs like to munch on when they’re working on creating delicious dishes.
After a busy day in the kitchen working hard through our vegetarian food menu, Amber unwinds with a cup of decaffeinated tea, a bag of jelly worms, and the most violent movie she can find. That’s a unique way to de-stress, but we can’t knock it until we’ve tried it!
When asked about her favourite dish on the menu, Amber explained that she was particularly excited about working with sea buckthorn on the last menu. This is an endangered species that ecologists are encouraging people to eat more of and so it creates delicious dishes while also being good for the planet. Something that aligns very closely with our values at Glas.
Amber’s passion for cooking started early, and she has been working in the industry since she was 16 years old. She explained that she’s never found another environment that compares, and we can certainly understand why.When it comes to cuisine, Amber’s favourite to cook or eat is Louisiana-style food. This cuisine is known for its bold flavours and spice, so our mouths begin to water when we imagine the amazing dishes that Amber comes up with in the kitchen.
We asked Amber what her proudest moment has been while working at the restaurant, and she explained that it was “successfully finishing the vegan marshmallow for the first time and seeing them sitting all fluffy”. It’s difficult to envision just how satisfying that must have been.
If Amber could have any famous chef cook for her, she would choose Samin Nosrat. Samin is an amazing chef, writer, and teacher, so we can certainly see why Amber would choose her.
Finally, we asked Amber what food she would eat for the rest of her life (even outside of our vegetarian food menu) if she had to choose just one. Her answer? Ice cream. We’re with you on that one, Amber!
