Gluten Free

We are delighted to announce that our Glas Restaurant Menu is now suitable for coeliac and gluten-intolerant diners. We handle no wheat or wheat products in the restaurant.

This means that Glas is the first fully gluten-free fine dining restaurant in Ireland and one of a select few that has no wheat, barley or rye in any of its dishes. This is a huge development for coeliacs across the country as well as visitors and tourists coming to Dublin who need to have a restaurant offering all dishes free of gluten.

Here at Glas, which serves meat-free, vegetarian and vegan food, we have always received a lot of queries from customers asking about gluten and wheat-free options. The need for ‘free from’ menus is growing all the time and we at Glas have always tried to accommodate as many options as possible.

For this reason, Glas Head Chef Malte Half and his team of chefs set about ensuring our menu is 100 per cent gluten-free. For those who can’t eat gluten, are gluten-intolerant or even just prefer to have a wheat-free diet, this gives them a really brilliant dining option in the heart of Dublin City Centre.

Coeliac disease or celiac disease is a common digestive condition caused by a negative immune reaction to eating gluten – a protein that is found in food with wheat, barley or rye. For people who have the disease, eating gluten can lead to the immune system attacking their own tissue. This then leads to the small intestine becoming inflamed and unable to absorb nutrients. It can cause a wide range of symptoms, including diarrhoea, abdominal pain and bloating.

Latest figures estimate that there are some 100,000 people living with coeliac disease in Ireland with another 450,000 gluten intolerant. Worldwide, it is estimated that the condition affects 1 in 100 people which is a huge number.

And, of course, even though we don’t use meat or gluten, all our food still tastes great. This is because we use the very best local produce and seasonal produce we can find. This is because Malte is dedicated to being as sustainable as possible in sourcing the best natural ingredients. We have made Irish produce – and obviously Irish veg – the star of the show at Glas. Malte goes to great lengths to work with Irish food producers and farmers who grow their own produce in an as environmentally friendly way as possible.

Some of our spring and summer dishes which are coeliac-friendly include our Goat’s Cheese Mousse, Chicory Kimchi, Salted Hazelnut Brittle, Beetroot Jerky, our Seaweed Fritter, Lettuce Gazpacho, Dressed Kale, Camelina Oil and our Oyster Mushroom Croquette, Ramson Remoulade, Saffron Kohlrabi, Cauliflower Couscous

Some of our main courses which are also now all gluten-free include Blue Cheese & Buckwheat Ragout, Poached Garlic Emulsion, Nori Crisp and our Charred Roman Broccoli, Mushroom Cake, Morel Vinaigrette, Pistachio Crumble.

We are also delighted to have received our Best Practice gluten free certification from the Coeliac Society of Ireland. This is really important for us to have so that coeliac diners are confident that there are no wheat products used in the restaurant.

Reservations & Deposits

Children are welcome for lunch but children under 10 years are not permitted for dinner service. Reservations can be made through the OpenTable platform or by calling us on +35316724534. A deposit of €20 per person is required to make a reservation. This will be deducted from your final bill. Notice of cancellation must be given 48 hours in advance of your reservation, in which case your deposit will be refunded. Please note that dogs are not permitted on the terrace.
